Professional Cook
The UFV Culinary Arts program trains aspiring cooks to work in all styles of kitchens: small family-style restaurants, large multinational hotels, or health care institutions.
All cooking students are registered as cook apprentices with Skilled Trades BC. Upon successful completion of the program, eligible students can write both the Professional Cook One and Two Certificate of Qualification exams.
Sample topics include:
- Safety and sanitation
- Knife-handling skills
- Use and care of equipment
- Cooking methods
- Banquet planning
- A la carte dining
- Basic service skills
- Menu planning and costing
Duration: September and February, 39 weeks
Location: UFV Trades and Technology Centre-Chilliwack
Prior to Program: Successful completion of
- Foodsafe Level 1
- All grade 10 and Grade 11 graduation-required courses
- English Language Arts 12 67% minimum
- Math 11 (Foundations of Mathematics, Pre-calculus or Apprenticeship and Workplace Mathematics with 67% minimum unless program specific requirement)
- Exemplary attendance and conduct
- Competitive entry
Transportation: Responsibility of student

Requirements: Must be able to lift heavy objects and stand for long periods of time in one place.
Certification Received: Professional Cook Level 1 & 2
